Fish and Spinach Curry with Coriander Rice

Ingredients

400g Diced White fish e.g. Basa or Haddock​
130g Basmati rice​
1 Red Onion​
120g Spinach​
1 jar Sharwood’s Korma Cooking sauce
10g Coriander 

Instructions

Step 1

Finely dice the onion, chop the spinach roughly and chop the coriander.

Step 2

Heat a large wide based pan with a drizzle of oil.

Step 3

Fry the onion for 3-4 minutes until soft.

Step 4

Add the rice to a separate pan with 300ml cold water and a pinch of salt.

Step 5

Bring to the boil and then reduce heat. Cook for 12-15mins.

Step 6

Once cooked stir most of the coriander through.

Step 7

Meanwhile add the Sharwood’s Korma cooking sauce to the onion and cook for 1-2 mins.

Step 8

Add the spinach and let it wilt for 1-2 mins

Step 9

Place the fish over the curry and cook covered for 4-5 mins.

Step 10

Serve the curry on top of the rice.

Step 11

Garnish with remaining coriander.
