Prawn Coconut Curry

Ingredients

180g Raw peeled king prawns
1 Lime
1 Brown onion
50g Solid coconut cream
1 Red chilli
15g Fresh ginger
2 tbsp Sharwood’s Tikka Curry paste
2 Garlic cloves
5g Coriander
1 Vegetable stock cube

Instructions

Step 1

Peel and chop the onion, grate or finely dice the garlic and ginger, finely chop the chilli without the seeds and cut the lime in half

Step 2

Heat a large pan with a drizzle of vegetable oil, once hot add the onion with a pinch of salt cook for 4-5mins

Step 3

Add the curry paste, ginger, garlic and most of the chilli heat for 2-3 mins

Step 4

Dissolve the coconut cream and stock cube in 300ml boiling water

Step 5

Add the stock to the pan with the juice of half the lime and the prawns and cook for 4-5 mins until cooked through

Step 6

While the prawns are cooking chop the remaining lime into wedges and chop the coriander

Step 7

Serve with rice and sprinkle the coriander on top with the lime wedges on the side
